Leftovers

Minimising waste to ease the household budget has never been more important, which explains why recipes that use up leftovers have been getting a regular workout at my place.

Minestrone soup will take any orphaned veg and leftover pasta in its tomatoey depths. Just finish it with plenty of black pepper, a swoop of olive oil and grated parmesan. Toast and generously butter that leftover stale bread to dunk in it.

Leftover rice from that Thai curry became a really wonderful special fried rice with a fried onion, the last quarter of unused cabbage (shredded), peas, corn, a swoosh of hoisin, a few small frozen prawns and the leftover scraps of a roast chook and shredded pork shoulder.
