As we celebrate International Women’s Day, Matt Preston pays tribute to the women who have been guiding lights in his cooking world.

I’ve said it before before and I’ll say it again. Women have had a far greater impact on the way I cook than men. Maybe that’s because I seldom use a siphon gun or sous-vide machine or artfully ‘ballotine’ a chicken leg. I focus on the realms where female cooks and chefs rule supreme – cookbooks, magazines and the home-style cooking of so many of my friends. To them all, it’s time to say a big thank-you.
