How do you cook crayfish? Simple lobster recipes from chefs to help you prepare a Christmas feast

It’s a long time since Australians had access to relatively cheap lobsters, or crayfish as they are known in some parts of the country. So what are some easy ways to prepare these spiky sea creatures?

Southern rock lobsters exports have been affected by trade tensions with China, which has resulted in them being sold cheaply around the country, and even live, in some cases, fresh off the boats that caught them.

“If you are picking them up live, the biggest thing is grab it from the back — not from the front because that is going to be pain and suffering,” Tasmanian chef Paul Foreman said.

While there is no consensus about the best recipe for cooking a cray amongst the chefs that ABC Radio Hobart and Northern Tasmania’s Evenings program
