FIFA 21 is not due for official release on Next Gen consoles until tomorrow.
However, you can download the game for your PS5 and Xbox Series X|S already.

Release Date
The official Next gen launch of FIFA 21 is on Friday, 4 December.
Up until then, it was thought that players could only play the current version of the game through the new consoles.
