The latest software update for Apple Watch was released in the last few hours full details here. But unlike other updates, watchOS 7.3.1 only showed up for a select group of Watch models, specifically Series 5, first released in 2019, and last years surprise extra model, Apple Watch SE, which appeared at the same time as Series 6.
