The enigmatic forward and the Dockers signed on Thursday night agreed to a deal which would release him from the rest of his 2020 contract.
The agreement came after the club this week informed the 25-year-old he would not be offered a contract for next season.
McCarthy played just one game for the Dockers in 2020, in round one against Essendon at Marvel Stadium when he was tried as a wingman. He had 11 disposals.
