Matt Preston’s guide to stews, casseroles and braises – News + Articles

Landing himself in hot water when he recently misnamed a casserole has led Matt Preston to wonder… what’s in a name?
You may think it impossible to fall out while praising someone. I can, however, confirm it’s not. There I was, telling my friend how delicious her stew was at lunch, when the table went icier than an old student fridge that hasn’t been defrosted… ever.
“It’s a casserole,” she replied, bristling.
You see, it seems there’s a distinct pecking order in the rating of “wet dishes” such as stews, ragus, casseroles and braises. Surely there’s more to it than elevating a dish by simply giving it a fancy French name?…
