Australia says goodbye to a gastronomic great.
One of Australia’s gastronomic greats, Tony Bilson, has passed away peacefully in his home following a long illness.
The self-taught chef, along with his former wife Gaye, were considered the movers and shakers of the Australian dining scene, particularly during the 70s and 80s.
His influence can be seen across his many dining institutions, which include La Pomme d’Or, Tony’s Bon Goût, Berowra Waters Inn, Kinselas, Fine Bouche, Ampersand and Bilson’s, where he inspired a new generation of chefs. He also authored five cookbooks.
